Fresh Appalachian Blackberry Wine

A unique way to capture the taste of freshly picked blackberries is to make Blackberry wine. Perfect for brunch or outdoor parties, this blackberry wine was adapted from an old Appalachian recipe.

Ingredients

  1. 3 1/2 quarts water
  2. 7 quarts fresh blackberries (mashed)
  3. 1 egg white
  4. 7 pounds granulated sugar
  5. 2 quarts water.

Directions

  1. Gather the ingredients.
  2. In a large stainless steel or crockery container, combine the 3 1/2 quarts of water with the blackberries.
  3. Cover and let stand for 24 hours.
  4. Beat the egg white and transfer to a large saucepan.
  5. Stir in the sugar and 2 quarts of water.
  6. Bring to a boil; boil for 5 minutes.
  7. Skim and let cool.
  8. Add the skimmed syrup to the blackberry mixture.
  9. Stir and put in a jar covered tightly with a cloth.
  10. Skim each morning for 10 mornings.
  11. Cover with a cloth and let stand until fermentation stops.
  12. Serve and enjoy!
